BBQ Chicken Drumsticks With Coleslaw
These are a real crowd pleaser, and the BBQ chicken drumsticks are perfect when paired with crunchy cabbage and crispy fried noodles.
BBQ Chicken Drumsticks
You will need to cook this in a bag. I use the Knorr Barbeque flavor Cook-In-A-Bag.
- 250 ml sunflower oil
- 1 100g packet 2 minute noodles
- 1.2 kg chicken drumsticks
- 1 Knorr BBQ flavor cook-in-bag
- 15 ml honey
- 2 cups red cabbage shredded
- 1 carrot
- 180 ml mayonnaise
- 30 ml parsley coarsely chopped
Preheat the oven to 180 degrees Celsius.
Heat oil in a wok and fry all the noodles in batches, turning to cooks both sides.
Remove and set aside on a piece of paper towel to drain and cool.
Place chicken drumsticks in a single layer in the Knorr cooking bag.
Sprinkle the seasoning mix inside the bag and add the honey. Hold closed and roll gently.
If you don’t have Knorr, you can use a cooking bag and add your own spices.
Place the roasting bag onto a baking tray and knot loosely to seal.
Pierce the bag 3 times on top with a knife and roast for 25 minutes or until cooked.
Cut open the top of the bag and cook for a further 10 minutes to brown the chicken.
In a large bowl, combine the red and green cabbage, carrot and noodles.
Stir through the mayonnaise and sprinkle over the parsley.
Divide the drumsticks between four plates spooning any remaining sauce in the bag over the chicken. Serve with the coleslaw on the side.
