Broccoli Cheese Pie With Chicken
I made this broccoli cheese pie last night for dinner and it was absolutely delicious. It took me literally twenty minutes to prepare and another twenty in the oven. The recipe serves 4 but the portions were big.

Broccoli Cheese Pie
You Will Need:
1 punnet broccoli
boneless chicken breasts or strips (I used 4 chicken breasts)
1 tin of cream of chicken soup
1/2 cup grated cheese
1/2 cup of mayonnaise
1/2 cup cream
a squeeze of lemon juice
3/4 teaspoon curry powder
salt and pepper to taste
ready made puff pastry
Grease a pie dish.
Boil or steam the broccoli for a few minutes and drain. I did this in the microwave for two minutes.
Cut the chicken into small pieces and fry lightly until just cooked.
Mix together the soup, cheese, mayonnaise, cream, lemon juice, curry powder, salt, and pepper. If you don’t have cream, then you can use milk.
Layer the pie dish as follows:
- Broccoli at the bottom
- Chicken strips on top of the broccoli
- Pour the sauce over the top
Roll out the puff pastry. If I can find it I use the cheese and herb flavored one which is delicious. If not you can sprinkle cheese and paprika over the top of the pastry before placing in a preheated oven at 180 degrees and baking until the pastry is golden.
Place a small ramekin over the center of the pie before baking and layer the pastry on top of it, so that the pastry gets nice and crispy and not soggy in the sauce. Once the pie is cooked then you can slice the center and take the bowl out.
