Easy Chickpea Salad Recipe With Chicken

Here is an easy chickpea salad recipe that you can serve up as a healthy meal. Its quick and easy and this recipe serves two people.
Chickpea Salad Recipe
You Will Need:
2 Chicken Breasts
200ml fat-free Greek yogurt
2 tsp mild curry powder
400g can chickpeas, drained and rinsed
Juice of 1/2 a lemon
A small handful of mint leaves chopped
100 g Cherry tomatoes quartered
1 small red onion chopped
1 tbsp peanuts crushed
Method:
Boil some water in a pan and add chicken breasts and salt and put the lid on.
Turn off the heat and leave for 15 minutes until the breasts are cooked through.
Drain and shred the chicken.
Mix the yogurt, curry powder, lemon juice, 1/2 of the chopped mint and some seasoning in a bowl.
Toss the chicken and chickpeas with half the dressing and season.
Arrange on 2 plates and scatter the tomatoes, onion, remaining mint, and peanuts over the chicken.
Drizzle any extra dressing over the top.
