Healthy Starters That Are So Easy To Make

Here are a couple of healthy starters. They are easy to make and are a continuation of how to stock your kitchen with healthy ingredients.
Spring Onion Pancakes With Dipping Sauce
- 1 egg
- 1 cup flour
- 3/4 cup water
- 6 spring onions (thinly sliced)
- 1 clove garlic (minced)
- 1 tsp salt
- 2 tsp canola oil
- 2 tsp sesame seeds
- 2 tbsp distilled white wine vinegar
- 2 tsp soy sauce
- 1 tsp sugar
- 1 tsp red pepper flakes

Toast the sesame seeds.

Whisk together the flour, egg and water until smooth.

Stir in the spring onions, garlic and salt.

In another bowl, combine seeds with all ingredients for dipping sauce and set aside.

In a pan, heat one teaspoon of oil over a medium-high heat.

Ladle three-quarters of a cup of batter into the pan and smooth it out into a thin pancake.

Cook until golden brown on one side. This will take about three minutes.

Flip the pancake and cook until golden brown on the second side for two to three minutes.

Repeat with the remaining oil and batter.
Tip: To toast the sesame seeds, heat a small frying pan on medium heat. Add the sesame seeds and cook, stirring constantly until just golden and fragrant. This will take about two to three minutes.
Remove from the pan immediately to cool.
Asian Style Broccoli
- 230 g tender stem broccoli (sliced lengthwise)
- 1 tbsp canola oil
- 1 clove garlic (crushed)
- pinch chilli flakes
- 2 tbsp oyster sauce

Cook broccoli in boiling salted water until bright green and tender.

Plunge into ice water.

Heat oil in a pan over a medium heat and saute garlic until softened, then stir through the chilli flakes.

Add oyster sauce and broccoli and warm through briefly, tossing well.

A serving suggestion is to serve with simple seared salmon and add lime or lemon wedges for squeezing.
Sauteed Wild Mushrooms
- 1/2 tbsp olive oil
- 2 spring onions (thinly sliced, white parts only)
- 1 clove garlic (minced)
- 115 g wild mushrooms (washed and sliced)

In a medium pan, heat the oil over medium-high.

Add spring onions, garlic and mushrooms and cook, stirring frequently until mushrooms soften and begin to brown.
This will take between six and eight minutes.
