Hearty Winter Soup Recipe

As it is now into proper winter here in South Africa, I thought you would enjoy trying this hearty winter soup recipe.
I love soup, especially in winter, and if it is thick and full of veggies, even better. I hope you enjoy this hearty winter soup recipe as much as I did.

Hearty Winter Soup Recipe
This chunky tomato, celer, and bean soup is suitable for vegetarians – simply use vegetable stock instead of meat stock. Feel free to add carrots if you like.
You will need:
1 large onion chopped finely
2 tbsps of olive oil and extra to drizzle
2 celery stalks chopped finely
1 tbsp of chopped rosemary leaves
2 garlic cloves chopped finely
2 cups of chicken or vegetable stock
5 tomatoes chopped
2 x 400g cans of cannellini beans rinsed and drained
2 tbsps of chopped flat leaf parsley
Bread of your choice to serve with the soup
Method:
Heat the oil in a large pan over medium heat.
Add the celery, onion, garlic and rosemary and stir for 5 minutes until the vegetables soften.
Add the beans, tomatoes, and stock.
Season with salt and pepper.
Bring to the boil over high heat, then reduce the heat to low.
Cover and simmer for 15 minutes or until thickened.
Stir in parsley.
Spoon the soup into bowls and drizzle a little olive oil over the top.
Serve with bread or bread rolls of your choice.
