Low Fat Macaroni Cheese

low fat macaroni cheeseWith this low-fat macaroni cheese, you can enjoy this comfort food without the guilt.

This will make enough for 1 person for five days or a meal for four to five people.

Low Fat Macaroni Cheese

You Will Need:

280g Whole Wheat Pasta – Any shape works.

3 cups of cauliflower florets (or broccoli)

1 cup cream cheese (reduced fat)

1.5 cups cottage cheese (low fat)

2 cups cheddar cheese (reduced fat) or Mozzarella

1,5 tsp dijon mustard

1.5 tbsp garlic powder

Salt and Pepper to taste


Cook the pasta in boiling water as per the packet instructions. For instructions on how to cook pasta perfectly, click here.

If using fresh cauliflower, halfway through the cooking time add the florets. If using frozen cauliflower add just before draining the pasta.

Drain when the pasta still has a bite.

Add the cream cheese, cottage cheese, and half of the cheddar to the pasta mix.

Return to low heat and stir to mix and combine.

Add the mustard and garlic powder and season with salt and pepper.

When the sauce has melted and thickened, remove it from the heat.

Top with the remaining cheddar cheese.

If you want that grilled cheesy top, set the grill to high and make sure your skillet is oven-proof. Place the skillet under the grill for 5-6 minutes until the top is bubbling and golden brown.

You can serve immediately or portion into containers. to reheat, microwave in 30-second bursts stirring in-between. Add a splash of water if it becomes dry while reheating.
