Quick Tuna Meals

If like me you hate to spend more time in the kitchen cooking that you have to, but you still need to have a healthy meal to feed your family, try this quick and easy tuna dish.

Quick Tuna Meals
You Will Need:
1 tin tuna
frozen mixed vegetables
1 onion chopped finely
a dollop of garlic to taste
300 ml of milk
1 cup of flour
cheese
lemon juice and salt to taste
a dollop of margarine
Method:
- Brown the onion.
- Add the garlic and then the mixed vegetables.
- Stir fry until the veg just cooked.
- Add drained tuna.
- While this is heating through, make a cheese sauce in the microwave.
- Melt the margarine and then add a third of the flour.
- Whisk it into the margarine.
- Whisk the milk into it. Add the rest of the flour slowly.
- Microwave on high until thickened, whisking every two minutes.
- Add a generous handful of grated cheddar cheese, salt to taste, and a squirt of lemon juice.
- Stir well until the cheese is melted.
- Add the cheese sauce to the tuna mix and stir well.
- Serve over mash potatoes or spaghetti.
