Tasty Asian Chicken Soup

Quick, easy and healthy simple soup recipe.

  • 500 g chicken breast
  • 2 1/4 cups chicken stock
  • 1 large spring onion (finely sliced – white and green parts)
  • 1 1/2 tsp lime juice
  • 1/2 tsp ground ginger
  • 2 tbsp soy sauce
  • 1/2 cup sliced wild mushrooms
  • 1 cup baby spinach leaves
  1. Place chicken and stock in a medium saucepan and bring to the boil.

  2. Add lime juice, spring onion, ginger and soy sauce.

  3. Reduce heat and simmer until chicken is cooked through which takes six to ten minutes.

  4. Remove chicken and add mushrooms.

  5. Cook for five minutes until the mushrooms are soft.

  6. Shred chicken and return to the pot.

  7. Add spinach.

  8. Stire and cook until spinach wilts which takes about two minutes.


Broccoli Soup

Another easy and healthy soup recipe

  • 2 tbsp olive oil
  • 1 bunch spring onions (chopped white parts only)
  • 2 cloves garlic (crushed)
  • 1 litre chicken stock
  • 1 head broccoli (chopped)
  • 100 g baby spinach leaves
  • fresh lemon juice
  • sea salt flakes and pepper
  • 80 g goats cheese or feta
  1. Heat olive oil in a pot.

  2. Saute spring Onions.

  3. Add garlic and sweat for five minutes.

  4. Add broccoli and stock and bring to the boil.

  5. Simmer for 10 minutes until tender.

  6. Add spinach leaves.

  7. Simmer for another minute.

  8. Process with a hand-held blender until smooth.

  9. Season with lemon juice, salt and pepper.

  10. Serve with feta cheese crumbled on top.


Wild Mushroom Soup

Delicious and satisfying.

  • 250 g wild mushrooms (washed and chopped)
  • 2 tbsp butter
  • 2 spring onions (chopped, white parts only)
  • 1 clove garlic (minced)
  • 2 tbsp flour
  • 2 cups chicken stock
  • salt and pepper to taste
  1. Melt butter in a medium saucepan.

  2. Add mushrooms, spring onions and garlic.

  3. Cook stirring often until the mushrooms are brown and soften. This will take about 6 to 8 minutes on a medium high heat.

  4. Add flour and stir well.

  5. Cook about two to three minutes more.

  6. Pour in the stock, stirring continuously.

  7. Season with salt and pepper and bring to the boil.

  8. Lower the heat and simmer for 15 minutes, stirring frequently, until the soup is thick and the mushrooms are fully cooked.

  9. Transfer half the soup to a blender or use a hand-held blender and puree until smooth.

  10. Return puree to the pot, stir thoroughly and serve.
