Sweet Corn Salad with Chilli and Feta

This tasty salad is something different from the ordinary and for those that love a bite the chilli adds just enough of this to suit your craving.
Sweet Corn Salad
This Salad is made with sweet corn, chilli and feta and is tasty and simple.
- 4 cobs sweet corn
- juice of 2 limes
- 150 ml olive or flaxseed oil
- pinch salt
- 1 green chilli (deseeded and chopped)
- 1 tsp sugar
- 1 clove garlic (crushed)
- handful fresh coriander chopped
- 2 rounds feta (crumbled)
- black pepper (freshly ground)
- rocket, spinach, watchers and lettuce (any combination)

Cut the corn off the cobs and place in a pan.

Dry fry the corn on high for five minutes or until corn is crisp and slightly browned.

Make a dressing by blending the lime juice, oil, chilli, sugar, salt, crushed garlic and coriander.

Pour half the dressing over the corn in the pan while still warm, then add crumbled feta and leave to marinate.

Lay the salad leaves in a bowl and top with the marinated corn mixture.

Garnish with extra coriander and season to taste.
