Vegetarian Couscous Recipes For You To Try

Here is one of the vegetarian couscous recipes that I have tried and loved.

You Will Need:vegetarian couscous recipes

2 cups of water

1 cup of uncooked couscous

1 jar (294g) chunky vegetable spaghetti sauce

1 can of garbanzo beans (chickpeas) drained and rinsed

1/4 tsp crushed red pepper flakes

2 tbsp chopped fresh parsley

Method:

Bring the water to the boil in a medium saucepan and stir in the couscous.

Cover the saucepan and remove from heat.

Let it stand for 5 minutes or until liquid is absorbed.

Meanwhile in a medium saucepan, combine the spaghetti sauce, beans, and red pepper flakes.

Cook over medium heat for 5 to 7 minutes or until thoroughly heated stirring occasionally

Fluff the couscous with a fork.  Serve the sauce mixture over the couscous and sprinkle with parsley.

If desired, sprinkle with shredded fresh parmesan cheese.
